The High Tea experience is complemented by a selection of premium teas from Ronnefeldt, a renowned German tea brand with nearly 200 years of history, cherished by luxury hotels around the world.
Crafted using traditional methods, each tea offers a rich aroma and depth of flavor that pairs beautifully with sweets, elevating every moment of your tea time.

Our house-made Royal Milk Tea is also prepared using Ronnefeldt tea leaves.
The result is a smooth, indulgent blend where the richness of milk meets the tea’s natural depth and fragrance, creating a refined and comforting cup to enjoy from the first sip to the last.

At Mercure Yokosuka, we are committed to sharing the unique charm of the local community through our dining experiences.

 

we feature strawberries from Hajime Farm, carefully grown using traditional soil-based cultivation, which makes full use of the natural richness of the land.

 

From four different varieties, we select only the strawberries that are in the best condition at the time of serving

 

The debut “Very Berry! Strawberry & Sakura Spring Afternoon Tea” is created under Mercure’s global philosophy, “DISCOVER LOCAL,” as part of our ongoing effort to highlight regional stories and ingredients.
For this seasonal offering, we use strawberries from Hajime Farm, a family-run strawberry farm located in Tsukuihama, Yokosuka City.

Hajime Farm is dedicated to the increasingly rare practice of soil cultivation, nurturing each strawberry with great care. As a fourth-generation farming family, they continue to honor the land of Tsukuihama through sustainable methods, avoiding herbicides entirely and harvesting every strawberry by hand.

The mineral-rich, clay-based soil characteristic of the Miura Peninsula allows the roots to grow strong and absorb nutrients slowly and steadily. This process helps concentrate flavor within the fruit, resulting in strawberries known for their deep sweetness and vibrant aroma.

Grown with patience and respect for the soil, Hajime Farm’s strawberries are both juicy and full-bodied, offering a depth of flavor that perfectly suits a springtime afternoon tea experience.

During the offering period, one of four varieties — Benihoppe, Oi-C-Berry, Yayoi Hime, or Hoshi no Shizuku — will be carefully selected based on peak quality.
Each variety has its own balance of sweetness and fragrance, allowing guests to enjoy subtle differences with every visit — a seasonal pleasure unique to this time of year.

 

A Spring-Inspired Lineup of 10 Delights

Ten carefully crafted items come together to bring the colors, flavors, and excitement of spring to your table.

The sweet selection features visually delightful creations such as a light and airy Strawberry Mousse, gently capturing the fresh juiciness of locally grown strawberries, and an adorably sized Strawberry Mini Tart that is as charming as it is delicious.
You’ll also enjoy fresh strawberries, served as they are to highlight their natural flavor, along with warmly baked scones accompanied by a chef-made strawberry jam prepared with generous amounts of fresh strawberries, carefully balanced for sweetness and fruitiness. Each bite allows you to savor the true essence of strawberries until the very last moment.

The savory offerings bring a touch of spring to the experience, including an open-faced sandwich of Sakura-flavored smoked salmon and cream cheese, as well as a unique Sakura Financier paired with prosciutto. The gentle balance of sweetness and saltiness provides a refreshing contrast between desserts and keeps the experience light and enjoyable throughout.

Midway through your afternoon tea, enjoy a special “Liquid Dessert Bliss”
the Very Berry Strawberry Sweet Mocktail.
Blending rich strawberry flavor with smooth milk and a hint of gentle acidity, this non-alcoholic treat tastes just like a sip of strawberry shortcake. Served between courses, it refreshes the palate while heightening anticipation for the next delight, adding a pleasant rhythm to the overall tea experience.

For beverages, we offer seven varieties of premium tea from Ronnefeldt, the historic German tea brand cherished by luxury hotels worldwide. From classic black teas to fragrant fruit infusions, selections such as Sweet Berries and Fruity Chamomile pair beautifully with strawberry and sakura flavors and come highly recommended.

To elevate the occasion even further, a sommelier-selected rosé sparkling wine is also available by the glass (¥900, tax included), perfect for adding a celebratory touch to your afternoon.
